So I came up with an easy keto low carb cookie recipe to enjoy my favorite cookies.

How To Make Keto Cookies
Melt the butter in microwave. Set aside to cool
Mix almond flour with xanthan gum and salt.
Whisk egg yolks till they are thick, add erythritol and mix well
Pour butter and sour cream and mix.
Then add almond flour mixture and combine until uniform.
Separate dough into 10-12 balls. Place onto a baking tray lined with parchment paper and press them down to make cookies.
Bake for approximately 10 min in oven preheated 180C / 350F
Let the cookies cool down completely and make frosting.
For frosting beat the butter and erythritol.
Then beat heavy cream to form stiff peaks.
Add whipping cream and fold in until smooth
Frost the cookies

Cookies
- 2 cup almond flour
- 1 teaspoon xanthan gum
- 1/2 teaspoon salt
- 3/4 cup softened butter
- 1/4 cup sour cream
- 2 Egg
- 1 cup erythritol
Frosting
- 1/2 cup butter, softened
- 1 cup erythritol
- 2 tablespoon whipping cream
Instructions

- Pour butter and sour cream and mix. Then add almond flour mixture and combine until uniform.
