How To Make Keto Cookies
Preheat oven to 350F
Combine all ingredients for the filling in a pan. Cook until zucchini is soft.
Combine all ingredients for the pastry in a food processor. Pulse into a smooth dough.
Put dough in between sheets of parchment and flatten with a rolling pin.
Take half of the dough
and cut out cookie bases with a cookie cutter.
Cut remaining dough into strips.
Top each base with prepared filling. Form lattice on top with prepared strips of pastry.
Transfer cookies onto a baking sheet lined with parchment
and bake for 15 minutes at 350F.

- 2/3 cup Almond Flour
- 1 tbsp Erythritol
- 2 tbsp Cold Butter
- 2 tsp Cold Water
For the Filling
- Β½ cup Sliced Zucchini
- 2 tbsp Butter
- 1.5 tbsp Brown Sugar Swerve
- Β½ tsp Apple Extract
- Β½ tsp Cinnamon Powder
Instructions
