Low Carb Keto Fat Bombs
Start by preparing the berry layer; bring all the ingredients for the berry layer in a saucepan and simmer on low for 5 minutes
Gently smash the mixture with a fork
Pour ½ tsp of the berry mixture into an ice cube mold; freeze for 30 min;
Prepare the cream layer by mixing the butter, erythritol and heavy cream into a sauce pan on low heat until the butter and erythritol has melted
Whisk until all is well combined
Pour on top of the berry layer; freeze for another 30 minutes;
Prepare the chocolate layer by melting together the coconut oil and chocolate
Pour over the first two layers of the fat bomb; freeze overnight.

- 50 grams frozen berries or strawberries
- 3 tbsp coconut oil
- 1 tsp erythritol
For the cream layer:
- 3 tbsp butter
- 1 tsp erythritol
- 1 tbsp heavy cream
For the chocolate layer:
- 50 grams Lily’s dark chocolate
- 1 tbsp coconut oil
Instructions
- Start by preparing the berry layer; bring all the ingredients for the berry layer in a saucepan and simmer on low for 5 minutes; gently smash the mixture with a fork and pour ½ tsp of the berry mixture into an ice cube mold; freeze for 30 min;
- Prepare the cream layer by mixing the butter, erythritol and heavy cream into a sauce pan on low heat until the butter and erythritol has melted; whisk until all is well combined and pour on top of the berry layer; freeze for another 30 minutes;
- Prepare the chocolate layer by melting together the coconut oil and chocolate; pour over the first two layers of the fat bomb; freeze overnight.
