How to make keto funfetti bars
Preheat the oven to 325 degrees.
Mix the coconut flour
baking powder
and ⅓ C. Swerve confectioners sugar substitute together in a mixing bowl until well combined.
Add ½ C butter
,1 egg, 1 tsp vanilla extract, ¼ tsp butter extract and 1 Tbsp coconut oil to the dry ingredients and blend on high until smooth and creamy
Fold in 3 Tbsp of sugar free sprinkles at this time if you would like additional sprinkles in the funfetti bars, and not just on top.
Place the batter into a well greased loaf pan, and bake for 20 minutes or until cooked through.
Let the cookie mixture cool completely.
Once cooled, start making your icing by combining all of the icing ingredients together
and blending
until light and fluffy.
Smooth the icing over the cookie mixture in the loaf pan
and top with 1 Tbsp of sugar free sprinkles (couple of options either this one or this one)
Cut into 10 equal pieces and serve.
