Keto Peanut Butter Pie
Ingredients
For the chocolate cookie crust:
- 1 ½ cup Almond flour
- 1 teaspoon Baking powder
- 2 tablespoon Butter unsalted and softened
- ¼ cup Swerve confectioners sugar substitute
- 1 teaspoon Vanilla extract
- 3 tablespoon Cocoa powder unsweetened
- 1 Egg
For the filling:
- 8 ounce Cream cheese softened
- ½ cup Lower carb peanut butter
- ½ cup Swerve confectioners sugar substitute
- 1 teaspoon Vanilla extract
- 1 cup Heavy whipping cream
Optional toppings:
- Sugar free chocolate syrup
- Crushed peanuts
Instructions
- Preheat the oven to 375 degrees.
- In a mixing bowl, combine the ingredients for the pie crust, beat on high until combined well.
- Press the crust mixture into the bottom of a well greased pie pan, and pierce all over with the tines of a fork.
- Bake for 15-18 minutes until cooked through, but not too browned.
- Let the pie crust cool.
- While the crust cools, place the heavy whipping cream in a mixing bowl, and whip to soft peaks. Set aside.
- Add the rest of the ingredients for the filling to a mixing bowl, and beat on high until smooth and creamy.
- Fold the whipped cream mixture into the peanut butter filling mixture, and layer evenly on top of the crust in the pie pan.
- Place the pie into the fridge to set for several hours before serving.
- Serve garnished with optional sugar free chocolate syrup and/or crushed peanuts if desired.
