How to make keto pizza bites
Place 1 ½ cups of the mozzarella cheese and the cream cheese in a microwave safe bowl.
Heat at 30 second intervals until the cheese is melted and combined.
Add the almond flour
and garlic powder to the cheese mixture, and knead with your hands until well incorporated.
Combine the cheese mixture and an egg in a mixing bowl, and beat on high until a smooth dough has formed.
Place the dough into the fridge to chill for 30 minutes.
Preheat the oven to 350 degrees.
Roll the dough into small balls, and press them into the compartments of a mini muffin tin, hollowing out the center of each compartment.
Poke holes in the dough with the tines of a fork to keep them from forming bubbles when baking.
Bake the dough for 8-10 minutes until lightly browned and cooked through.
Place a teaspoon of low carb marinara sauce in the bottom of each of the dough compartments.
Top with the other ¼ cup of shredded cheese, and some pepperoni pieces.
Bake the mini pizza bites for another 3-5 minutes until the cheese is melted and bubbly.
Top with some oregano before serving if desired.
