In a bowl combine: flour, sugar, baking soda and salt and mix well.
Add the milk, egg, oil and vanilla extract. Using a wire whisk mix ingredients
well. The batter should be thick.
Add cranberry sauce (you can use – leftover, homemade or store bought)
and fold it in gently
Fill muffin cups about to about ยพ of the cup. Should make 18 muffins.
(Optional) Sprinkle chopped dried cranberries on top of each muffin.
Bake in oven @ 400 degrees for 20 minutes the tops should be golden.
When you insert toothpick it should come out clean
Let them cool in the pan for about 10 minutes and then transfer to wire
rack to finish cooling

2 cups of All Purpose Flour
1 cup of Sugar
1 tablespoon of Baking Powder
ยผ teaspoon of Salt
1 cup of Whole Milk
1 Egg
ยผ cup of Vegetable or Canola Oil
1 tablespoon of Vanilla Extract
1 cup of Cranberry Sauce (homemade left over)
ยผ cup of Dried Cranberries, finely chopped (optional)
