Preheat oven to 180ºC/350ºF.
Mix all ingredients until smooth.
Stevia
Shredded Coconut
Baking Soda
Eggs
Whisk together well
Use a ziploc bag to place ingredients cut off end of bag and divide into individual muffin baking molds.
Bake for 12-15 minutes, or until golden on top.
To make the frosting – Mix cream cheese, lemon juice
and Stevia until smooth.
Drizzle over the mini rolls sprinkle with cinnamon

- ½ cup Almond Milk
- 3 tbsp. Shredded Coconut
- 2 tbsp. Stevia
- 2 tbsp. Cream Cheese
- 2 Eggs
- 1 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1 tsp. Grounded Cinnamon
For the topping:
- 3 tbsp. Cream Cheese
- 1 Lemon, squeezed
- 1 tbsp. Stevia
- 1 tsp. Grounded Cinnamon
Instructions
- Preheat oven to 180ºC/350ºF.
- Mix all ingredients until smooth.

- Bake for 12-15 minutes, or until golden on top.
