Place the coconut flakes, heavy whipping cream, 2 tbsp. Coconut oil, Swerve sugar substitute, vanilla extract and xanthan gum into a mixing bowl, and mix thoroughly until all of the ingredients are well combined.
Form the mixture into small 1 inch balls, there should be enough to make 14 servings.
Press a single almond into the top of each of the coconut balls that you have formed.
Place 1 tbsp of coconut oil into a microwave safe bowl with the baking chips, and microwave for 30 seconds at a time until the chocolate has melted completely. Stir the mixture to combine it well.
Dip each of the almond joy fat bombs into the chocolate, and place them onto a lined plate or baking sheet.
Place the baking sheet of fat bombs into the freezer to set for an hour before serving.
