Place the cream cheese and mozzarella cheese into a bowl that is microwave safe. Heat the cheese for 30 seconds at a time until it is completely melted and well blended.
Add the almond flour, baking powder, 1 tbsp sugar and 1/2 tsp cinnamon to the bowl with the cheese mixture, stir and knead with your hands until completely combined.
Place the dough into a mixing bowl, and add the egg. Blend on high until the dough is well combined.
Put the dough into the freezer to set for 30 minutes to make it easier to handle.
Preheat the oven to 350 degrees.
Wet your hands slightly, and form small balls of the dough into very thin round bagel shapes with your fingers. You want these to be about the size of a quarter or half dollar. The thinner you make them, the crispier the resulting chips will be.
Top the bagel chips with mixture of remaining 1 tbsp sugar & 1/2 tsp cinnamon, and bake for 8-10 minutes or until browned and crisped to your liking.
