ΒΌC.Chipotle peppers in adobo sauce finely chopped
ΒΌC.Chopped green onions
Β½tsp.Garlic powder
Salt and pepper to taste
2C.Monterey Jack cheese shredded
Instructions
Preheat the oven to 375 degrees.
Add the cheese in 8 evenly sized circles to a large baking sheet lined with parchment paper or a silicone baking mat. Leave a bit of room between each circle of cheese.
Bake for 10 minutes, or until the edges are browning and the cheese takes on a lacelike appearance.
While the cheese is baking, mix together the shredded chicken, chipotle peppers, green onions, garlic powder and salt and pepper to taste in a bowl until well combined.
When the cheese is done, let it cool for a minute or two, then place a layer of the chicken mixture down the center of each cheese circle.
Carefully roll the cheese up around the filling to form a taquito shell. Let the cheese cool completely and harden.
Serve topped with sour cream and salsa if desired.
