How To Make Keto Chocolate Chip Shortbread Cookies
Place the almond flour
butter, sweetener
and almond extract into a mixing bowl, blend on high until the butter is well incorporated.
Fold ¼ cup of Lily’s baking chips into the batter.
Press the batter into an even layer in the bottom of a 9×9 parchment lined baking dish.
Sprinkle the other ¼ cup of chocolate chips on the top of the batter, and gently press them down.
Freeze for 1 hour.
Remove the mixture from the freezer, and preheat the oven to 350 degrees.
Cut the mixture into small ½ – 1 inch squares/rectangles.
Separate the bites, and place them on a parchment lined baking sheet.
Bake for 8-10 minutes.
Let cool completely before serving.
