  • ¾ cup Almond Flour
  • 2 tbsp. Cream Cheese
  • 1 Egg
  • 1 tbsp. Erythritol

Filling:

  • 1 cup Zucchini, chopped
  • 2 tbsp. Erythritol
  • 1 tsp. Cinnamon
  • ½ cup Water

Caramel Sauce:

  • ¼ cup Erythritol
  • 3 tbsp. Full Fat Whipping Cream
  • 2 tbsp. Butter

Instructions

  1. Mix mozzarella, almond flour, cream cheese and Erythritol in a bowl and microwave until melted.
  2. Add the egg and combine.
  3. Divide the dough in two equal parts.
  4. Place one ball of dough over baking paper, cover with baking paper and roll it thin.
  5. Repeat with the other ball of dough, and refrigerate both for at least 30 minutes.
  6. Preheat oven to 220ºC/420ºF.
  7. Add zucchini, erythritol, cinnamon and water to a pot and cook at medium high for about 15 minutes (or until zucchini is soft and creamy).
