How to make keto cinnamon pecan bread pudding
Preheat the oven to 350 degrees.
In a mixing bowl
thoroughly beat and combine
all of the ingredients
for the bread.
Pour the bread mixture into a greased loaf pan, and bake for 35-45 minutes until it is cooked completely through.
Remove, and let cool.
Cut the cooled bread into bite-sized pieces, and place them into a greased oven-safe skillet.
In a mixing bowl
combine the ingredients for the bread pudding mixture
and whisk
to combine well.
Pour the bread pudding mixture over top of the bread in the skillet
and bake for 30 minutes
until browned and set.
Serve

- 2 C. Almond flour
- 2 tsp. Baking powder
- ½ tsp. Xanthan gum
- 6 Eggs
- 1 Stick of butter unsalted
For the bread pudding mixture:
- 3 Eggs
- 1 C. Heavy whipping cream
- ¼ C. Unsweetened vanilla almond milk
- 1 tsp. Vanilla extract
- 2 tsp. Cinnamon
- 1 C. Swerve confectioners sugar substitute
- ½ C. Chopped pecans
Instructions
