Learn how to make low carb keto cinnamon roll pancakes
Cinnamon Topping
Soften the butter until creamy with a fork once it is creamy, add stevia and cinnamon, mix well. Until there are not any clumps (you may add cinnamon depending on your taste)
Once you have achieved a creamy consistency, add it to a piping bag or a Ziploc bag, with scissors open a small aperture, leave in the fridge while you make the batter.
For Pancakes
In a bowl add the dry ingredients (almond flour, baking powder, and stevia). Whisk well to combine all the ingredients.
Add eggs and almond milk, continue whisking until you have a homogenous batter, let it sit for 3 minutes while you preheat the griddle or frying pan to medium heat.
Spray griddle or frying pan with oil
pour the batter with a ¼ measuring cup on the heated griddle or frying pan, once these are almost ready to be turned (about 2 minutes and bubbles are forming on top) add the cinnamon roll frosting in a circular motion, leave for another 30 seconds, then flip your pancakes.
Leave that side only about 30 seconds and remove from the griddle, serve them on a plate and leave aside to warm while you make the creamy topping.
For Frosting
With whisker whisk cream cheese until creamy (about one minute) add stevia then add almond milk a little at the time while you are whisking until you have a creamy and runny consistency.
Top pancakes with it and serve.

Recipe Notes
Important note: It is very important that you add the cinnamon topping once the pancakes are almost all the way cooked, that way when you flip them, they will be on the other side only a very short time avoiding the butter to melt too much.
It is ok and normal for the topping to melt a little.
