In a mixing bowl, add egg, keto friendly sweetener, and Peanut Butter.
Mix well until a soft batter forms.
Scoop out the batter and roll into small balls.
Place on a parchment paper lined cookie sheet or use a good non stick baking pan.
Space each cookie an inch or so apart.
Take a fork and press the batter balls so they flatten and get the traditional Peanut Butter cookie pattern on them.
Bake at 350 degrees for 10-12 minutes.
Allow the cookies to cool for about 30 minutes prior to eating.
This way,they will firm up a bit.
Otherwise, they will have a cake like texture.

Can almond butter be substituted for peanut butter?

I am sure it can be but it will taste different (as you probably expected). depending on taste you may want more or less sweetener, I personally find almond butter to be a bit more bitter. Totally worth a try and I wish you happy baking.

This was actually a good cookie. I doubled the recipe because…well, my husband loves a pb cookie, and I love low Keto carbs. Mine were very thick, so I did pour I a 1/4 cup coconut milk, a teaspoon of baking powder. They were good. And still keto good.

I just made these cookies today and they are amazing!! Using a Vitamix I made homemade peanut butter, used Monkfruit granulated sugar and am storing them in the freezer so that they are some what out of site. I will definitely make again!
