Low Carb Keto Cookies
Mix the almond flour, powdered erythritol, coconut flour, and baking soda in a bowl.
Add the butter, egg, and vanilla extract and mix until it comes together in a dough.
Divide dough among 3 bowls. Stir cocoa powder into one and strawberry puree with additional almond flour into another, leave the third batch plain.
Line pan with parchment paper. Spread strawberry layer into prepared pan and spread evenly with spatula or by hand. Next layer will be vanilla, and chocolate the last.
Refrigerate for a least an hour
Remove dough out of the pan. Slice in half lengthwise, then cut each half into about 1/2 inch cookies.
Place the cookies on the baking sheet and bake for 9 to 10 minutes in the oven preheated to 180C / 350F

Ingredients
- 1 cup almond flour
- 5 tablespoons powdered erythritol
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 1/2 cup butter, softened
- 1 large egg
- 1 tsp vanilla extract

- 1 Tbsp pureed fresh strawberry (3-4 berry) +1 tbsp almond flour
Chocolate layer
- 1 ½ tbsp raw cocoa powder
