How to make keto strawberry cookies
Preheat the oven to 350 degrees.
In a mixing bowl, combine the almond flour
Swerve confectioners sugar substitute
and baking powder.
Stir until thoroughly mixed.
Add the vanilla, butter and egg to the mixture, and blend on high until smooth and creamy.
Place the dough into the freezer to chill for about 30 minutes.
Form the dough into small balls, and place on a well greased baking sheet. Create an indentation into the center of each cookie with your thumb.
Try to leave some dough at the bottom of each cookie so that the jam does not leak out during baking.
Place a teaspoon or so of the strawberry jam into the indentation in each cookie.
Bake the cookies for 10-12 minutes until browned and cooked through.
If you need more jam on the cookies after they are mostly done baking, you can add some additional at the end of the baking time to fill them back up.
