  • 1 Can Palmini lasagna noodles rinsed and drained
  • 8 oz. Shredded chicken
  • ½ Red bell pepper chopped
  • ½ Orange bell pepper chopped
  • ½ Large Jalapeno finely chopped
  • 1 C. Shredded purple cabbage
  • ½ tsp. Cumin
  • 1 tsp. Chili powder
  • ½ tsp. Oregano
  • 4 oz. Cream cheese
  • ⅔ C. Sour cream
  • 1 ½ C. Cheddar jack cheese shredded
  • ¼ C. Chopped green onions
  • ½ C. Salsa
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 350 degrees.
  • Add the shredded chicken, bell peppers, Jalapeno, purple cabbage, cumin, chili powder, oregano, cream cheese, sour cream, ½ cup of the cheddar jack cheese, green onions and salt and pepper to taste to a large mixing bowl. Stir to combine well.
  • Place a bit of the filling mixture on the end of the palmini noodles, and roll them closed around it.
