4 Ingredient Keto Peanut Butter Cookies
Preheat the oven to 180 °C / 350 °F, and prepare the mold of the mini muffins, dry it very well and lightly grease.
In a mixing bowl, with a hand mixer, add all three ingredients and beat vigorously until they are fully integrated. If you wish you can use an electric mixer. (You can add one more teaspoon of sweetener if you wish).
When the dough is completely homogeneous, pour the mixture into the molds, keep in mind that you must fill the molds leaving approximately 1 cm to the top, as these muffins greatly increase their volume with cooking.
Bake the muffins for about 25 to 30 minutes until their surface is golden brown.
Remove from the oven and let cool for at least 30 minutes.
Unmold and enjoy
