How to make keto cinnamon sugar muffins
Preheat the oven to 350 degrees.
In a mixing bowl
combine all of the ingredients for the muffins
and blend on high
until well combined and fluffy.
Place mini cupcake liners into a mini muffin tin, and fill them with a heaping teaspoon of the batter just to the top of each cupcake liner.
Bake the mini muffins for 10-12 minutes until browned and cooked through completely.
Combine the granulated sweetener and cinnamon for the topping in a small bowl until well combined.
Brush the top of each cooled mini muffin with melted butter for the topping
and then dip each muffin top into the cinnamon sugar mixture to coat.
Serve
