How to make keto Nutella pancake bites
In a mixing bowl
combine the ingredients for the nutella
and mix them well.
Use just 3 tablespoons of the oil at this time, you can add more later if needed.
Transfer the mixed nutella ingredients to a food processor, and blend on high until smooth and creamy.
If the mixture is not smooth enough, you can add the additional oil at this time.
In a mixing bowl
combine the ingredients for the pancakes
and blend on high until just combined.
Do not overmix.
Let the mixture sit for a few minutes before using.
Heat a cake pop maker machine, or small mini pancake pan on the stove.
Pour the pancake batter into the cake pop machine, filling each section not quite to the top.
Transfer the nutella mixture to a piping bag, or a Ziploc bag with the corner cut out of it.
Quickly pipe a generous serving of the nutella mixture into the center of each pancake.
Close the lid of the cake pop maker, and allow the pancakes to cook for several minutes until browned and cooked through.

- 1 C. Hazelnut flour or just ground hazelnuts
- 3-5 Tbsp. Olive or coconut oil
- ⅓ C. Swerve confectioners sugar substitute
- 2 Tbsp. Cocoa powder
For the pancakes:
- 1 C. Almond flour
- 2 Tbsp. Swerve confectioners sugar substitute
- 1 tsp. Baking powder
- 2 Eggs
- 1 tsp. Vanilla extract
- 2 Tbsp. Melted coconut oil
- ⅓ C. Almond milk unsweetened
Instructions
- In a mixing bowl, combine the ingredients for the nutella, and mix them well. Use just 3 tablespoons of the oil at this time, you can add more later if needed.
