In a bowl combine ground almonds, melted butter and vanilla extract.
Mix until combined and transfer the mixture into 8×8 inch baking pan
lined with parchment paper. Let it chill while you prepare the filling.
In another bowl combine together cream cheese, zest of lemon and vanilla extract.
Add in the stevia and mix until combined.
Add in the heavy cream and mix with hand mixer until smooth and fluffy.
Pour in the melted gelatin and stir until fully incorporated and mixed
through.
Pour the filling over the chilled crust. Smooth it out with spatula.
Let it set in refrigerator for 2-3 hours and cut small cubes (bites).
Melt the chocolate over a saucepan with simmering water.
Pour the chocolate over each cheesecake bite.
Let it set and serve.
