How to make keto animal cookies
In a mixing bowl, combine the almond flour
Swerve sweetener
baking soda
vanilla extract
butter and egg.
Blend on high until a smooth dough is formed.
Place the dough into the freezer to set for 1 hour.
This makes it less sticky and easier to roll out.
Roll out the dough between two pieces of parchment paper.
Roll it out to the desired thickness of your animal cookies.
You want them to be a bit thicker, so be careful not to roll your dough too thin.
Use mini animal shaped cookie cutters to cut shapes out of the dough, and transfer the cut shapes to a parchment lined baking sheet.
Bake the cookies for 8-10 minutes or until browned and cooked through.
If you are using thinner cookies, you may need to set a lower bake time, so keep an eye on them.
Place the white chocolate chips and coconut oil in a microwave safe bowl, and heat at 30 second intervals until completely melted and smooth.
Pour the melted chocolate into several different small bowls, and place a few drops of food coloring in each one.
Mix the food coloring thoroughly
and then dip the baked cookies into the melted chocolate.
Transfer the dipped animal cookies to a parchment lined baking sheet
and add some sprinkles to the top of each one.
Place the baking sheet with the cookies into the freezer to set for 30 minutes and then serve.

- 1 C. Bake Believe White Chocolate Chips
- 2 Tbsp. Coconut oil
- Food coloring
- Sugar free sprinkles
