How To Make Keto “Oatmeal” Cookies
Preheat your oven to 350 degrees
and line a baking sheet with parchment paper.
In a mixing bowl
combine the ingredients for the cookies
and blend on high until smooth.
Form the dough into 16 equal portions using a teaspoon or cookie scoop.
Roll the portions into balls, and flatten slightly with your hands.
Place the cookie shapes onto the parchment lined baking sheet, and bake for 12-15 minutes until browned and cooked through.

- 1 teaspoon Baking powder
- ¼ teaspoon Xanthan gum
- ½ cup Shredded unsweetened coconut
- ⅔ cup Sliced almonds
- ½ teaspoon Cinnamon

- 8 tablespoon Butter unsalted and melted
- ½ cup Swerve confectioners sugar substitute
- 1 teaspoon Vanilla extract
- 1 Egg
