  • 2 c. Heavy whipping cream
  • ยผ c. Chopped macadamia nuts

Instructions

  1. Grease the inside of aย mini muffin pan.
  2. Pour the white chocolate pudding mix and the 2 cups of heavy whipping cream into a
    mixing bowl.
  3. Beat on high for 2 minutes. The mixture will being to set and become thicker than
    regular pudding, this is supposed to happen.
  4. Fold in the macadamia nuts.
  5. Place a heaping teaspoon of the mixture into each of the mini muffin pan sections.
    Smooth it out with your fingers or the back of a spoon.
  6. Place the bites into the freezer until they are hardened.
  7. Remove the ice cream bites from the mini muffin tin, and store the bites in an airtight container in the freezer.

    How many can you eat at a sitting? What are the carb count?

    One batch makes 24 cookies. And if my calculations are accurate each serving contains
    84 calories
    8.2 g fat
    0.6 g carbs

      This looks and sounds amazing! Will definitely try these. I think the carb count is off though– the pudding alone adds 1g of carbs per cookie. It’s probably not that much more though.
