One of my least favorite parts about baking when it’s still pretty warm outside is the oven making the house hot and gross. Outside of that, even if it’s not warm outside, baking usually takes up a good chunk of time I don’t have. Don’t get me wrong, I love baking, but prefer to have options that are quick and delicious. That way, I’m not tempted to dive into other options that are quick and easy, but not near as healthy.

That’s why I came up with these easy keto no bake cookies. Not only are they my favorite flavor ever (chocolate), they’re also creamy and rich without being unhealthy. This means cravings are satisfied pretty quickly without feeling like you need ten to make it through the day. They’re just rich enough that one is plenty, but not too rich that they’re overwhelming.

How Do You Make Keto No Bake Cookies?

You’re going to be so thrilled with how easy these keto pudding cookies are. In fact, it’s almost silly to explain how to make them because they’re just that simple. Start with a big bowl and a greased muffin tin. Coconut oil is great for greasing the pan. In your bowl, place the pudding mix and heavy cream and whip until nice and thick. Toss in your chocolate chips then fill the muffin tin. Place in the freezer until solid and enjoy!

Tips for Making Keto No Bake Cookies

  • If you don’t want to add in chocolate chips, you definitely don’t have to. In fact, if you prefer another add in, as long as it’s keto-friendly, you can use it in place of the chocolate chips. However, no add-in is necessary if you don’t desire one.
  • If you don’t prefer chocolate, you can use any flavor of pudding mix to make these. Just be sure that the pudding mix is sugar free. These are a versatile keto pudding cookie which is why they’re such a favorite.
  • Be sure to grease the pan with something that won’t add flavor to these easy keto no bake cookies. It’s definitely necessary to grease the pan so the cookies will slip right out once solid. If you don’t, it may be a little difficult removing them from the pan in one piece.
