How to make keto chocolate shortbread cookies
Preheat oven to 350F. Line a baking sheet with parchment.
Cream butter, Brown Swerve Sweetener
and vanilla in a bowl.
Stir in almond flour and ground pecans.
Roll the dough into balls and arrange on the prepared baking sheet.
Slightly flatten each ball.
Bake for 10-12 minutes.
Meanwhile, combine chocolate chips and butter in a heat-proof bowl.
Set in the microwave for 1-2 minutes at 30-second intervals.
Stir.
Take the cookies out of the oven and leave to cool completely.
Dip each cookie in the melted chocolate and set on parchment until chocolate layer is set.
Serve
