How to make keto shortbread cookies
Preheat the oven to 350 degrees.
Place the almond flour
butter, Swerve sweetener
and vanilla extract into a mixing bowl. Beat the mixture on high until smooth and creamy.
Fold the chopped pecans into the mixture until well blended.
Form the mixture into small 1 inch balls of dough, and flatten slightly before placing on a well greased baking sheet.
Bake the cookies for 8-10 minutes until browned and cooked through.
Let cool completely and serve.

- ¾ C. Swerve confectioners sugar substitute
- ½ tsp. Xanthan gum
- 1 tsp. Vanilla extract

After doing low carb for the last 5 years, I have to say. These are the best low carb cookies I have come across. Very easy,. I used a different sweetener. Not a fan of the cooling effect with swerve. I also baked these much longer. I like them crisp as possible. I am looking forward to a couple with my coffee in the morning.
