How to make keto cranberry brie bites
Add the mozzarella in a microwave-safe bowl.
Microwave on high for 1 minute.
Stir and microwave for another 30 seconds.
In a separate bowl, stir together almond flour, stevia, and baking powder.
Stir in the almond butter and egg into the melted cheese.
Blend in the dry ingredients into the cheese mixture.
Put the ball of dough in between sheets of parchment and flatten to about 1/2 inch thickness with a rolling pin.
Cut the dough into even-sized squares and set into a muffin tin.
Bake the empty shells for 5 minutes.
Take out of the oven.
Fill each shell with a slice of brie and about a teaspoon of cranberry sauce.
Bake for another 5-7 minutes at 375F.
Remove from the oven and allow to sit on the pan for 5 minutes.
Optional to add additional piece of brie once done cooking (if you love cheese) π
