How To Make Keto Pecan Candied Cracker Jacks
Preheat the oven to 250 degrees.
In a bowl, combine the pecans and peanuts, toss to combine.
Place the butter into a pot over medium heat on the stovetop.
Stir until the butter has melted.
Add the Swerve brown sugar substitute
and sugar free honey to the pot on the stove, and stir until completely dissolved.
Sprinkle the xanthan gum over the ingredients in the pot, and continue to cook it down and whisk until thickened into a caramel like substance.
Remove the mixture from the heat, and whisk in the baking soda
and vanilla extract until well combined.
Pour the caramel mixture over the pecans and peanuts in the mixing bowl, and stir to combine.
Place the mixture in an even layer on a parchment lined baking sheet.
Bake for 30-45 minutes, stirring the mixture every 15 minutes, until the mixture is browned, but not burnt.
Let the cracker jack mixture cool completely.
It will begin to harden as it does.
Break apart into bite sized pieces if needed and serve.
