How To Make Keto Lo Mein

Keto Lo Mein

Heat the olive oil in a skillet over medium heat.

Add the mushrooms, bell pepper and carrots to the skillet and saute until just slightly tender.

Saute another 3-5 minutes.

Ingredients
  

  • 1 Can Palmini linguini noodles rinsed and drained
  • 1 C. Sliced mushrooms
  • 1 Red bell pepper thinly sliced
  • ¼ C. Matchstick carrot shreds (optional if you are strict keto)
  • ¼ C. Snap peas
  • 1 Tbsp. Olive oil
  • 2 tsp. Minced garlic
  • 2 Tbsp. Soy sauce or coconut aminos
  • 2 tsp. Swerve brown sugar substitute
  • ½ tsp. Sesame oil
  • ½ tsp. Ginger paste
  • Cayenne pepper to taste optional if spice is desired

Instructions

  • Add the mushrooms, bell pepper and carrots to the skillet and saute until just slightly tender.
  • Place the palmini noodles into the skillet with the vegetables and toss to combine well. Saute another 3-5 minutes.
