How To Make Keto Chicken Noodle Soup
Cut lasagna Palmini noodles into strips set aside
Heat the olive oil in a deep pot over medium high heat on the stove.
Add the celery, onion and shredded carrot to the pot, and saute until the vegetables start to become tender.
Add the minced garlic to the pot, and saute another 30 seconds.
Place the shredded chicken and cauliflower into the pot, and stir to combine.
Pour the chicken broth into the pot, and add in the palmini noodles.
Sprinkle in the Italian seasoning as well as salt and pepper to taste.
Stir to combine well.
Bring the mixture to a boil, reduce the heat to simmer, cover the pot and cook for 20 minutes, or until the cauliflower florets have become tender.

- 4 C. Shredded chicken
- 1 Can Palmini lasagna noodles cut into strips
- Β½ Tbsp. Olive oil
- 2 C. Cauliflower florets
- 2 Stalks celery chopped
- β C. Onion chopped
- ΒΌ C. Shredded carrots (*optional)
- 2 tsp. Minced garlic
- Β½ tsp. Italian seasoning
- 4 C. Chicken broth
- Salt and pepper to taste
Instructions
- Cut lasagna Palmini noodles into strips. Set aside
- Heat the olive oil in a deep pot over medium high heat on the stove.
- Add the celery, onion and shredded carrot to the pot, and saute until the vegetables start to become tender.
- Add the minced garlic to the pot, and saute another 30 seconds.
- Place the shredded chicken and cauliflower into the pot, and stir to combine.
- Pour the chicken broth into the pot, and add in the palmini noodles.
- Sprinkle in the Italian seasoning as well as salt and pepper to taste. Stir to combine well.

Notes
- If you are strict keto you can leave out the carrots.
