Preheat your air fryer to 350 degrees if required.
In a shallow bowl, whisk together 1 egg and 2 tbsp heavy whipping cream until well combined.
n a separate bowl, combine the pork rind crumbs
unsweetened coconut flakes, paprika, garlic powder, salt and pepper.
Mix until thoroughly combined.
Holding the tail, dip each shrimp first into the egg mixture
and the coat in the pork rind crumb and coconut mixture.
Place the shrimp in a single layer in your air fryer, and cook for 10-15 minutes until browned, crispy and cooked through.

- 1 Egg
