How to make instant pot Weight Watchers brownies
In a small bowl, mix together coconut flour
and cocoa powder completely, and set aside.
In a mixing bowl, blend together the eggs, Swerve
and vanilla
for several minutes until thick and frothy.
Heat the butter and Lily’s baking chips together in the microwave for 30 seconds.
Stir until completely melted and blended together.
Stir the cream cheese into the warm chocolate mixture until smooth.
Slowly beat the chocolate mixture into the egg mixture one tablespoons at a time until completely blended.
Add the dry ingredient mixture into the wet ingredients a little a time until blended well.
Mix the olive oil into the batter until combined.
Pour the batter mixture into a 6-7 inch Springform pan that has been well greased.
Sprinkle some additional chocolate chips and the chopped nuts on top for garnish.
Place a cup of water into the bottom of the Instant Pot, and then put a trivet down.
Put the Springform pan onto the trivet in the Instant Pot and close the lid, making sure the pressure valve is set to sealing.
Set the Instant Pot to manual for 9 minutes. When finished, perform a quick release by carefully pushing the release valve to the venting position.
Carefully remove the pan from the Instant Pot and allow it to cool completely.
Cut the brownies into small bite-sized pieces.
