  • 4 oz Cream Cheese, softened
  • 2 oz Butter, softened
  • 2 tbsp Erythritol
  • 1/3 cup Sugar-Free Graham Crackers, crushed (you can use this homemade low carb graham cracker recipe ) or you could use these cookies
 

Instructions

  1. Puree the blueberries and erythritol in a food processor.
  2. Add remaining ingredients and blend until smooth.
  3. Chill the mixture for 15-30 minutes or until firm enough to scoop.
  4. Take the mixture out of the chiller. Scoop and roll into balls.
  5. Chill until ready to serve.
