How to make keto chaffles
Preheat your mini waffle maker.
In a microwave safe bowl, combine the mozzarella cheese and cream cheese.
Microwave on high for 30 second intervals until the cheese is completely melted and combined.
Add the almond flour, confectioners sugar substitute
and baking powder to the cheese mixture, and knead thoroughly with your hands until completely combined.
Blend the egg into the cheese and flour mixture, until a thick batter has formed.
On the stove over medium heat, melt the butter in a skillet.
Once melted, add the brown sugar substitute to the skillet
as well as the diced zucchini pieces. Saute for 2-3 minutes until the zucchini begins to become tender.
Sprinkle the cinnamon over the zucchini, and cook for another 1-2 minutes on the stovetop.
Place 2 tablespoons of the zucchini mixture into the chaffle batter and mix well.
Place ⅓ of the chaffle batter into the mini waffle maker, and cook for 3-5 minutes until your desired level of doneness has been reached.
Repeat step 9 with the remaining ⅔ of the batter, to make a total of 3 chaffles.
Top the chaffles with the remaining zucchini mixture before serving.
