Combine the mozzarella and butter in a heat-proof bowl.
Microwave in 30-second intervals until fully melted.
Whisk in the egg into the cheese mixture.
In a separate bowl, whisk together almond flour, baking powder, and salt.
Blend the dry ingredients into the cheese mixture.
Knead the dough into a ball.
Divide the dough into 4 portions. Take each portion and roll into a log.
Cut into 1-inch pieces.
Do the same for the remaining dough.
Line the air fryer basket with parchment.
Arrange pieces of dough in the basket and cook at 325F for 2-3 minutes per side.
Mix together Brown Swerve Sweetener and cinnamon in a bowl.
Take cinnamon roll bites out of the air fryer and roll in the cinnamon sugar to coat.
