Preheat the oven to 360 F. Line a 9 x 13 inch baking tray with parchment.
Combine the coconut flour, the almond flour, stevia powder and a tiny bit of salt, mix in the melted butter and egg yolk. You should have a crumb that sticks together when pinched. If it feels too dry, then add a tiny bit of cold water.
Press the dough mix to the bottom of the pan in an equal layer and bake for 10 minutes.
While they are baking, prepare the filling. Whisk all of the ingredients together for lemon layer. It is not necessary to heavily beat the mixture – you don’t want to create any froth, we just need the ingredients well combined.
Once the base is prebaked, lower the temperature to 300 F.
Gently pour the filling over the base and bake for 25 minutes. Be careful not overbake or use too high heat.
Once baked, let cool completely before slicing into 12 squares and sprinkling with little more stevia powder.
