How to make keto caramel cinnamon sugar pretzel bites
Preheat the oven to 350 degrees.
Place 1 cup of mozzarella cheese
and 3 ounces of cream cheese together in a microwave safe bowl, and heat at 30 second intervals until completely melted and well combined.
Add almond flour
sugar substitute and cinnamon to the cheese mixture, and knead the ingredients by hand until well combined.
Place the egg into the mixing bowl with the cheese and flour mixture, and blend on high.
Place the dough into the freezer for 15-20 minutes to chill.
Form the chilled dough into 24 small bite sized pieces, and place on a parchment lined baking sheet.
Bake the pretzel bites for 12-15 minutes until browned and cooked through. Let the bites cool once removed from the oven.
While the pretzel bites are cooking, place 3 Tablespoons of butter, ¼ cup of heavy whipping cream
and 2 Tablespoons of Swerve brown sugar substitute into a pot over medium heat on the stove.
Cook the mixture down, whisking often, until it has thickened into a caramel colored sauce.
Remove the sauce from the heat and whisk in the vanilla extract.
Brush the tops of the pretzel bites with 1 Tablespoon of melted butter.
Combine 1 Tablespoon of granulated sugar substitute and 1 teaspoon of cinnamon in a small bowl, and sprinkle the mixture onto the tops of each of the pretzel bites.
Serve immediately with the caramel dipping sauce on the side.
