Whisk together eggs, avocado oil, water, salt, onion powder, and garlic powder in a bowl.
Blend in the coconut flour until smooth.
Ladle about ¼ cup of the batter in a lightly-oiled pan. Swirl around and cook for about a minute per side.
Preheat the oven to 400F.
Brown sausage in a skillet.
Add bell peppers and spinach. Sautee for 1-2 minutes.
Stir in eggs until cooked.
Season with salt and pepper.
Fill tortillas with the sausage mixture and mozzarella.
Roll.
Arrange taquitos on a baking dish and bake for 10-15 minutes.

- 1.5 cups Spinach
- 1/3 cup Diced Bell Peppers
- 3 Eggs
- ½ cup Shredded Mozzarella
