Keto French Toast Breakfast Sandwich
For the Bread
- 2 tbsp Butter melted
- 2 tbsp Heavy Cream
- 1 Egg
- 2 tbsp Coconut Flour
- ½ tsp Baking Powder
For the Coating
- 1 Egg
- 1 tbsp Heavy Cream
- ¼ tsp Cinnamon Powder
- ½ tsp Vanilla Extract
For the Sandwich
- 2 Eggs scrambled or fried
- 2 slices Bacon pan-fried
- 2 oz Cheddar Cheese
- 2 tbsp Sugar-Free Maple Syrup
- 1 tsp Powdered Erythritol
- Whisk all ingredients for the bread in a microwave-safe dish.
- Cook in the microwave for 90 seconds.
- Allow bread to cool for a few minutes before cutting.
- Whisk all ingredients for the coating.
- Dip both sides of the bread in the mixture.
- Pan-fry in butter for 2-3 minutes per side. Set aside.
- Fill toasts with bacon, eggs, and cheese then dust with powdered erythritol to serve. Optionally, serve maple syrup on the side.
