How to make keto Andes mints
Mix coconut oil
sweetener
coconut cream
mint extract
natural food coloring
stir until thoroughly combined.
Using a double boiler method , melt half of the chocolate (boil water on a pot, and place the chocolate over the steam – without touching the water – and stir until melted).
Line a baking tray with foil and cover with half of the chocolate – let it cool until hard.
Cover with the coconut mix and let it cool for 1 hour or until soften.
Melt the other half of the chocolate using the same method and cover the mint mix.
Refrigerate them for around 2 hours.
Serve

- ½ cup Coconut Oil, melted
- 2 tbsp. Coconut Cream
- ¼ cup Sweetener
- 2 tsp. Mint Extract
- 1 tsp. Green Natural Food Coloring
