  • 2 Eggs
  • 1 Tbsp. Unflavored whey protein isolate powder
  • 2 tsp. Baking powder
  • 1 tsp. Baking soda
  • ½ C. Plain Greek yogurt
  • ½ C. Swerve confectioners sugar substitute
  • 1 ½ tsp. Cinnamon
  • 1 tsp. Vanilla extract

For the crumble:

  • 1 C. Almond flour
  • ¼ C. Melted butter unsalted
  • 1 tsp. Cinnamon
  • ¼ C. Swerve confectioners sugar substitute

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, combine all of the ingredients for the cake. Beat on high until smooth and creamy.
  3. Pour the cake batter into a well greased 9×9 baking dish in an even layer.
  4. Combine the ingredients for the crumb topping in a mixing bowl, and sprinkle it evenly over the top of the batter in the baking dish.
  5. Bake the coffee cake for 30-35 minutes until browned and cooked through.
