Ingredients

  • ¾ cup Almond Flour
  • ½ cup Almond Milk
  • 3 tbsp. Shredded Coconut
  • 2 tbsp. Stevia (or your favorite sweetener)
  • 2 tbsp. Cream Cheese
  • 2 Eggs
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1 tsp cinnamon

For the icing:

  • 3 tbsp. Cream Cheese
  • 1 Lemon, squeezed
  • 1 tbsp. Stevia (or your favorite sweetener)
  • 1 tsp. Grounded Cinnamon

Instructions

  1. Preheat oven to 180ºC/350ºF.
  2. Mix all ingredients except for the icing ingredients until smooth.
  3. Fill individual muffin baking molds.
  4. Bake for 12-15 minutes, or until golden on top.
  5. Mix cream cheese, lemon juice and Stevia until smooth.
  6. Drizzle over the mini cinnamon roll bites with cinnamon on top.
