How To Make Keto Tiramisu
Preheat the oven to 350 degrees.
In a mixing bowl, combine almond flour
Swerve sweetener
baking powder and a pinch of cinnamon. Stir to combine well.
Add softened butter
vanilla
eggs, heavy whipping cream and strongly brewed coffee into the dry ingredients, and blend on high until smooth and creamy.
Pour the batter into a well greased loaf pan, and bake for 25 minutes until browned and completely cooked through.
Let the cake cool completely.
While the cake is cooling, add the egg yolks
and 2 tablespoons of Swerve sweetener to a double broiler, and warm up until thick and creamy.
Let the egg yolk mixture cool, and then whisk in the mascarpone completely.
beat the heavy whipping cream on high until it forms into stiff peaks.
Add the vanilla to the egg yolk mixture
and then fold the egg yolk mixture into the whipped cream until completely combined.
Slice the ladyfinger cake into thin slices
and layer pieces of ladyfinger cake over the cream mixture in a serving glass or bowl to form the parfaits.
Sprinkle the parfait with a dusting of cocoa powder for garnish if desired.

- ¼ C. Swerve confectioners sugar substitute
- 1 tsp. Baking powder
- Pinch of cinnamon
- 3 Tbsp. Butter softened
- ½ tsp. Vanilla extract
- 2 Eggs
- 2 Tbsp. Heavy whipping cream
- 2 Tbsp. Strong brewed coffee
For the Cream:
- 2 Egg yolks
- ½ C. Mascarpone
- ½ C. Heavy whipping cream
- 2 Tbsp. Swerve confectioners sugar substitute
- ½ tsp. Vanilla extract
