How To Make Keto Caramel Candy
In a pot over medium-low heat, melt the butter completely.
Whisk in the Swerve sweetener and the syrup, and cook down until the mixture reached a low frothy boil.
Whisk the mixture for 20-30 seconds, and then remove from the heat, and whisk for another 15 seconds.
Stir in the vanilla extract, and let the mixture cool slightly.
Fill the sections of a silicone candy mold about halfway full with the caramel mixture
and place into the freezer to set for a minimum of 3 hours.
If using a square or larger size mold, cut the hardened caramels in half
and then wrap in pieces of plastic wrap, parchment paper or plastic candy bags, twisting each end to enclose the candy completely.
