- 2 ½ C. Almond flour
- ½ C. Almond milk
- 3 Large eggs
- ½ C. Swerve confectioners sugar substitute
- ¼ tsp. Xanthan gum
- 2 tsp. Baking powder
- ⅓ C. Cocoa powder unsweetened
- ½ tsp. Vanilla extract
- ½ tsp. Peppermint extract
For the icing:
- 4 oz. Cream cheese softened
- 3 Tbsp. Butter softened and unsalted
- ½ C. Swerve confectioners sugar substitute
- 1 tsp. Peppermint extract
- 12 Sugar free York peppermint patties
Instructions
- In a mixing bowl, beat together all of the ingredients for the cake until smooth.
