- 300 grams Large Shrimp peeled and deveined
- 1 small Bell Pepper diced
- 1 tbsp Onion
- 1 tbsp Avocado Oil
- 2 tbsp Chopped Spring Onions
- Salt and Pepper to taste
- For the Sweet and Sour Sauce
- ¼ cup Sugar-Free Tomato Ketchup
- 1 tbsp Coconut Aminos
- 1.5 tbsp Cider Vinegar
- 1 tbsp Erythritol
- 1 tbsp Sesame Oil
- ½ tsp Ginger Powder
- 2 tbsp Water
Instructions
- Stir together all ingredients for the sauce in a bowl.
- Lightly season shrimp with salt and pepper.
- Heat avocado oil in a wok.
- Add shrimp and stir for 1-2 minutes.
