Learn how to make keto caramel apple fries
Combine all ingredients for the filling in a non-stick pan.
Stir over medium heat for 5-7 minutes or until zucchini “faux apple” is tender.
Take off the heat and set aside.
Add the mozzarella in a microwave-safe bowl. Microwave on high for 1 minute.
Stir and microwave for another 30 seconds.
In a separate bowl, stir together almond flour, stevia, and baking powder.
Stir in the almond butter and egg into the melted cheese.
Blend in the dry ingredients into the cheese mixture.
Divide the dough into 2 balls.
Put each ball in between sheets of parchment
and flatten to about ¼ inch thickness with a rolling pin.
Spread the zucchini filling on to one of the rolled out pieces of dough
and cover with the other piece.
Cut into strips about ½ inch wide.
Arrange on a baking sheet lined with parchment and bake for 8-10 minutes at 375F.
Then broil in low for 1-2 minutes.
Remove from the oven and allow to sit on the pan for 5 minutes.
Meanwhile, stir together all ingredients for the caramel sauce in a heat-proof bowl.
Set in the microwave for 30-60 seconds.
Take fries out of the oven and serve with caramel dip on the side.
